Creating dishes with respect to tradition and the environment, as well as pairing ingredients together simply and in harmony without any exaggerations, makes me feel passionate. I aspire to be able to be an inspiration to my colleagues and so I try, in every kitchen I work in, to create a good cooperation and a ‘ teamly ’ vibe.
